The Dewi Fried Chicken

Today I work with drumsticks, one of my favorite part of a chicken. Ever since I pulled them out of the freezer, I already knew what to do with them. Well, I did plan the menu since last night. I'm just awesome like that.
I think in all of the worlds, I'm the only one who cooks chicken this way. But, if I'm wrong, please let me know. Sometimes I realize I live in a bubble.

Now, even though the best fried chicken ever is KFC-thank you, colonel sanders, you have made the world such a wonderful place- for home made fried chicken, I like doing it like this best. It's easy and tastes great. Basically, I like using simple ingredients, ones that will not overpower the real taste of the chicken (or other types of meat I work with), but rather enhance the flavor.

Kind of like make up. I like make up, but the kind that only helps me look human like every day. I'm not really into the glamorous look that makes people wonder if that's really you.
Just so you know, the 'no make up' make up takes me half an hour to put on. A waste of time and money? Depends.

Anyways, back to the chicken.
I had with me 9 pieces of drumsticks, since I'm only cooking for me and my daughter tonight. It's a normal portion for us, we don't eat very much. *roll eyes*

They're rather small looking drumsticks, any smaller I might have to call them drumlets.
First, we marinade the chicken with 2 1/2 table spoons of vinegar (ordinary, every day, garden variety vinegar), 2 tea spoons of salt, and 1 1/2 tea spoons of white pepper.
Be sure to mix it well before leaving them back in the fridge for 30 minutes to marinade.

Next, for the dry ingredients, I prepared 5 table spoon fulls of flour-all purpose will do- and 1/2 table spoon full rice flour or corn starch or potato starch, whatever you have in your kitchen.
Today I had with me self raising flour and potato starch, so I worked with those.

To this dry mix, I added 2 1/2 tea spoons of salt and 1 tea spoon of white pepper and 2 tea spoons of black pepper. I just love the aroma of pepper. That's why many of my recipes use that ingredient :).

Then we mix the dry ingredients and wait until the chicken is ready to be coated with the flour mix.

Once the chicken is ready, coat them with the flour mix THOROUGHLY (even in crevices). There's no batter or wet mix in this recipe, because I'm not really a fan of thick flour coating on any of my fried meats, well except for tempura. Those are wonderful. No, you don't have to understand it.

Then I heated up vegetable oil, enough to almost cover the chicken when I fry them, then proceeded to deep fry the drumsticks until they're golden brown.

I flip them around around 2-3 times to get them to brown evenly.

When they are looking like this, they are ready to be taken out of the oil.

The finished product, which my daughter and I gobbled happily. We left 1 piece for my husband for when after he's done with his company dinner, in case he wants a bite.

Ingredients:

9 pieces of small-medium drumsticks
2 1/2 table spoons of vinegar
2 tea spoons of salt
1 1/2 tea spoons of white pepper

Flour mix:
5 table spoon fulls of all purpose flour
1/2 table spoon full of corn starch
2 1/2 tea spoons of salt
1 tea spoons of white pepper
2 tea spoons of black pepper

Vegetable oil (enough to cover the chicken)

I hope this recipe is simple and turns out great for all of you, especially if you're a beginner. I love it when people get excited over how simple a recipe is and that gives them the courage to start cooking.

Have a tasty day!

    1. Silahkan Tik. Emang ga ribet.

Sambal Goreng Ati Ampela (Spicy Chicken Liver and Gizzards)

Boy, the sound of this dish sure is extreme when you translate it into English. Reminds me of Halloween somehow. But hearing it in Bahasa delivers a calming sensation to my nerves. ' Sambal goreng ati ampela ', I associate this with deliciousness, bursts of flavor, and family :D. But, still, basically this dish really is chicken liver and gizzards cooked in chili, and if you're not used to this type of eating, then this is extreme for you, while it's like candy to me :P. Indonesia has many varieties of sambal goreng , every region has their own take on it, this is only one of them. This is the sambal goreng I grew up with, even though nowadays my mother has altered her recipe, but this is the flavors that I recognize and will soon share with you (complete recipe in the bottom of this post). What I've done here is I've cleaned and cut up to bite size pieces all the liver, gizzards and hearts. I should have showed you how it is done, but I forgot to

Swee Heng Bakery

Since I moved to Singapore in 2008, there has been a lot of adjusting to do, even until today. The difference in culture, habits, the way people talk, the way they walk, the way they eat, make friends, even the values that we hold, are different, even only slightly. But one thing that was and still is quite the big adjustment for me and my family is the fact that we, who come from Indonesia, where Muslims are the majority, have found ourselves becoming the minority in Singapore. This means, that when we go out to eat, there's a lot less options for us to choose from. A simple thing like one of my favorite snacks in Indonesia: Shihlin Taiwan fried chicken, does not have halal certification here. 'Errr, does that matter? It's still chicken.' Well yeah, but the chicken has to be halal (processed according to Islamic Law), then we can eat it :). Anyways, so this means every time I see a halal eating establishment, I get all excited. Especially, when they really know w

Gulai Kambing - Mutton Curry (My Mother in Law's Recipe, so you know it's gonna be good)

I am so passionate about this recipe, because it tastes so good, and the gravy is very very rich! The first time my mother in law taught me how to make this (it has been a special dish in her family for a long time now), I knew I was learning something special. And I was right. This recipe now has been a favorite among my family and friends. A memorable reaction from a colleague was when I saw her quietly eating the curry by herself, and I saw her opening and closing her eyes in response to the burst of flavors from the curry :D. She then shook her head (in amazement.....I hope).  I know that sounds exaggerated, but it was truly what happened! I mean, I cannot blame her.... If this does not look beautiful to you, I don't know what it is. Surprisingly, the recipe for making this is not at all complicated, but it is troublesome. The total cooking time for me was about 4 hours, to cook all the meat until it's tender, and the gravy to become like that :). But let me tell
